Kick Back and Get Comfortable:

Subista was so kind to give me a gift certificate to Home Chef. Now I am addicted. Picky but addicted. I am choosy on which weeks I want to get a delivery. I also had to plan in advance not to go food shopping the weekend before (so I have to load up on fruit two weeks before).

The stars have aligned and we got a box…

This is a recipe review of

Mediterranean-Style Broiled Tilapia with Roasted Asparagus and Cucumber Tomato Salad

Here are all the component Home Chef delivered for the above recipe!

Here is the front of the recipe card to make me all hungry and excited about cooking!

image

The back of the Recipe Card has the directions and in the upper left some tips which offers some tips and shortcuts.

Three kids? Shortcuts please!

image

In retrospect I should have read the directions. Because once I put the food in the broiler, I realized I forgot something so I added it. Then I realized I forgot another ingredient, so I added it.

image

Now previously Home Chef would do recommendations on what to drink with your meal. That has been left out. I liked the idea even though I would not use their recommendation so here are my drinks as I make my meal. Instant spiced apple cider (it was cold the day of cooking and I just came home from taking the girls out to the park) and mother’s milk tea.

Double fisting hot drinks for a hot meal.

I digress, back to the ingredients…

Focus Pnut

image

Noms!

Ok I am focused.

image

Baking sheet pan ready, salt and peppered, foiled and oiled! Seriously this is how I do the majority of my oven work unless I am in a rush. Then it is a really weird lazy reverse luxury thing because I save time but then my husband spends more time cleaning dishes. And no one wants to be at the sink cleaning more dishes than they need to!

I think there is a correlation between my husband doing the dishes and then me cooking right after.

image

Because I do not have the time to snap off each asparagus I trim them all lined up in a row.

image

Then I toss those asparagus flip flop on the foil baking sheet!

image

I squirt a little lemon on the asparagus. And on the section that will have my husband’s fish.

I am picky on how I take my lemons. Usually with a shot of vodka (lemon drops)!

image

This is what is left of the lemon. I saved half of the lemon for later use. I squeeze a bit into a cup to make a little lemonade just because. I saved some pieces to go on my husband’s fish and I gave one piece to Squeakette, the weeist of my Pnut people to nom on.

My Pnut people always like to nom on citrus fruits. Maybe to prepare them for lemon drops years from now.

image

Saving/hoarding some goodies for later!

image

Here are the fish all pretty and seasoned on. My husband has lemons on his.

image

Here are some green onions ready to be broiled. I also received some from my garden plot neighbor so there are more onions featured than what Home Chef gave.

image

And this is what everything looked like during half-time in the broiler because I remembered to snap a picture while remembering that I forgot to add the capers and something else I forgot.

I also learned how to use this oven’s broiler for the first time. Broiler cherry popped.

VOILA!

image

Verdict:

Fish = Awesome. I used some leftover tomato and cucumber from a previous Home Chef recipe for this meal. The asparagus and green onions was as fresh as can be. Most of all let me tell you that I LOVE BROILING GREEN ONIONS. I was so shocked I am not really a onion fan when it is chopped up and added to recipes. But to eat this all crunchy and caramelized made me plant two sets (i.e., batches) of green onions in my community garden.

Everything was very yummy and I highly recommend you picking this recipe when it is an option!

And broiling green onions!!!

Was this from a few weeks ago? I think we had this meal too! I love capers and tilapia and asparagus… I cut off all the asparagus ends in one chop too. 🙂

Lemon drops! YUM!!! I haven’t had one of those shots in forever – sugar around the rim!

Heat and Pnut I think we’ve stumbled across a Subscriptionista drink of choice! In addition to boxed wine, I think lemon drops are pretty high up there =D That was our shot of choice in college, and when I moved out to WA I would order it but got it served as a drink, which is not as easy to shoot [but still doable, of course].

Pnut this looks tasty! I may have to try broiled green onions. I threw my garden spinach into a smoothie this morning. I can’t believe how fast it grows! I’ll be swimming in tomatoes and spinach soon! Also I have one red strawberry already. $300 salad time.

Ahhh maybe your spinach is growing better than mine. I have started whole harvesting my spinach because they have started bolting (i.e., sprouting flowers and yes I had to look that up)! Apparently spinach gets bitter shortly after bolting I was only able to get a few leaves before the bolting started. So I planted some more with the seeds that I will be sending you.

On the other hand my kale is growing fast and huge! Collards and tomatoes are still growing up and my Chard is being harvested every other day but is not as huge as the kale.

        Mmmmm… Lemon drops.

I have a semi-red strawberry too! I will tell my husband of your $300 salad comment lol.
